Here’s another traditional Greek dish. Vine leaves stuffed with rice and fresh herbs, in a thick lemon sauce. Super healthy, unique and ‘vegan’ as the fashion of our days would call it. Most people buy these ready made and canned. They don’t go into all the fuss of making them. But like any other food, they can’t be compared to fresh homemade ones. They don’t take that much time to make. The only thing is, people are a bit bored of the folding procedure.
Let’s cook quickly, eat it even more quickly, go for a quick walk, have a quick shower, finish work quickly… Our schedules won’t allow us to relax and cook properly. That’s how food became really bad nowadays. We end up eating out, or buying something frozen or canned from the supermarket. And then we wake up one day feeling fed up, and decide to go to the other end. To become either vegan, vegetarian, gluten free, lactose free and so on.
Then again, we can simply eat everything that nature gives us, in the right amounts and in the right QUALITY. (there is no law saying that uncooked or raw food is always healthy)
A Relaxing cooking project
So take your time and try these stuffed vine leaves. Maybe you’ll remember how relaxing and creative cooking actually is. They do taste delicious. If you are a fun of green vegetables you will love them. If not, they may not be your thing. Anyway it’s a fun cooking project for you to try. You can serve them as a main dish or appetizer. Depends on your liking.
Got a vineyard ?
Vine leaves are collected in May. Before the leaves become dry from the summer sun and the vine gets sprayed. Fresh leaves need to be boiled in a casserole filled with water, salt and white wine for about 10 minutes. You then add them in a strainer and dip them in cold water. The easiest way, is to buy them ready in a jar with brine. Who has access to a vineyard anyway? If you’re like one in a million and you do have access to a vineyard, and you do know that it hasn’t been sprayed, and it is the month of May, than congratulations you’ve won. No… just kidding. All in all, if you use fresh leaves, than you will need the same number of leaves as the number of servings of this recipe. Plus 3-4 more just in case. Good luck.
