    The Best Cinnamon Cookies

    Okay, so this is hands down the best cookie I ever had in my life! It's a cinnamon cookie so that gives it a bonus point since I'm a huge fan of cinnamon. But other than that this cookie is so crumbly and comes with the most amazing filling. That of whipped honey butter!

    Haven't tried whipped honey butter yet? Oh, you don't know what you're missing! And it's so easy to make. You don't have to do anything really. Your electric mixer will do it all for you. You simply add the ingredients to the bowl.

    Another good thing with whipped honey butter is that it can be used in so many ways. Like a buttercream frosting (very stable and goes well with everything), like a cake and cookie filling, or simply as a spread on your bread or morning toast. And now that I'm thinking of it, I'm gonna give it a go on adding it to that sweet Easter bread I made.

    A Healthier, Sugar-Free Cookie Recipe

    Didn't I tell you yet? These cookies are completely sugar-free. They're made using honey as a sweetener which goes perfectly with cinnamon. And trust me, you won't be able to tell the difference between this sugar-free cookie and one that contains sugar. They're as sweet as they should be and a bit healthier.

    No Dough Rolling

    What I really hate when making tarts and cookies is having to roll that sticky dough. Especially when making cookies where you cut and roll the leftover dough again, and cut and roll the leftover dough again, and I'm tired just thinking about it... Not to mention, they turn out to be the one thicker than the other, which leads to unevenly baked cookies.

    Solution? Easy peasy! Shape the dough into a long log, wrap in parchment paper like a candy, secure it with some aluminum foil and refrigerate. Once the dough comes out cold and firm, cut it into slices with a sharp knife. So easy and all in one go. And the best thing about this? You can actually see how thick you cut the cookies.

    Ingredients

    For The Cookies:

    • 160 grams butter at room temperature
    • 150 grams honey
    • 1 egg
    • 1 teaspoon baking soda
    • 2 tablespoons ground cinnamon
    • 450 grams all purpose flour

    For The Whipped Honey-Butter Filling:

    • 200 grams butter at room temperature
    • 200 grams honey

    Instructions

    For The Cookies:

    • Cream butter until airy and fluffy. Add the honey gradually. Add the egg, cinnamon, and baking soda. Add the flour in small bits at a time. Once you have a crumbly dough remove from mixer.
    • Shape the dough into a long log. Wrap dough in a piece of parchment paper. Secure the edges giving it a candy shape. Wrap with some aluminum foil on top. Refrigerate for 1 hour.
    • Preheat oven to 180°C / 356°F.
    • With a knife slice dough into ½ cm thick cookies. Lay a piece of parchment paper on your ovens tray and add the cookies. Bake for approximately 10 minutes or until they get a golden brown color.

    For The Whipped Honey-Butter Filling:

    • Whip butter with the mixer until fluffy.
    • Gradually add the honey and mix until fully incorporated.
    • Add whipped butter into a piping bag and add just enough to cover the surface of one cookie. Cover with another cookie on top.

      This is in NO way sugar free! 14g of sugar per serving... honey is sugar!!!
