    And if you think that making perfect roast chicken with crispy (bbq-like) skin is something that requires skills or effort then think again...

    All you have to do is rub it with the delicious mustard & lemon paste mixture this recipe calls for.  And then add to a very hot, well-preheated oven.

    The best part of this Greek Roast Chicken Recipe is that it's sooo easy to make. You don't have to marinade it.

    Although you can if you want to, by preparing it (without adding the potatoes) and keeping it in the fridge for 1-2 hours before baking.

    Also, you don't have to roast it whole. In Greece, we always cut it into portions. This way it's easier to handle and gets cooked more evenly all around. So grab a sharp meat knife & see how to cut a whole chicken.

    Another great thing is that it gets cooked along with the side dish (the potatoes) all in one pan saving you extra cooking time and effort.

    Not to mention how soft and flavorful these potatoes end up being.

    Here's How To Make Greek Roast Chicken With Potatoes

    One Pan Chicken With Potato Wedges
    • Combine mustard powder, sweet paprika, lemon juice, olive oil, and oregano.

    • Chop the garlic cloves and toss here and there, season with salt and pepper, and add a finger of water to cover the bottom of the pan. Ready to bake!

    SERVE IT WITH: This Greek roast chicken goes great with some Tzatziki Dip, or a mouthwatering, Classic Greek Salad.

    COOKING TIPS: 1. Place the chicken in the pan with skin facing upwards in order to form a crust first and don't stick to the pan.

    2. When seasoning with salt, take into account the saltiness the mustard powder will give to the dish.

    3. Pick a wide enough pan so the ingredients won't be overcrowded.

    4. Add a finger of water to cover the bottom of the pan and make sure there is enough of it while baking in order to form a thick sauce at the bottom. If not then make sure you add a bit more as needed.

    Ingredients

    For The Chicken:

    • 2 kg / 4 pound chicken cut into 4 parts
    • 5 medium-sized potatoes peeled & cut into wedges
    • 4 garlic cloves chopped

    For The Mustard Mixture:

    • 8 tablespoons olive oil
    • 3 tablespoons mustard powder
    • 1 tablespoons sweet paprika
    • ½ lemon juiced
    • 2 tablespoons dried greek oregano

    Instructions

    For The Mustard Mixture:

    • Add all of the ingredients for the mustard mixture in a small bowl and whisk together until fully combined. Set aside.

    For The Chicken:

    • Preheat oven to 220°C / 428°F.
    • In a large pan add the chicken parts (with skin facing upwards) and the potatoes.
    • Pour the mustard mixture and rub it all over the chicken and potatoes.
    • Season with salt and pepper. Toss the chopped garlic here and there. Add enough water in the pan to cover by 2cm (1-inch).
    • Bake for about 30 minutes or until the chicken gets a dip golden brown color, flip the chicken parts and bake for 30 minutes more.
      NOTE: Throughout baking make sure there is always enough water in the pan to cover all of its bottom surface so the sauce won't thicken too much and burn.
    • Flip chicken parts one final time and cook for 10 minutes more.
    • Remove from oven and serve with some Greek salad and Tzatziki.
