Chocolate Cake: You will always want more…
Nowadays a chocolate cake has become a bit of a cliche. I mean really, if I search online for a chocolate cake how many results will I get? So I was a bit thoughtful about uploading a chocolate cake recipe also. Even though its a Traditional Greek Recipe and it’s shouldn’t be missing from my blog.
So just out of curiosity, I typed these 2 words CHOCOLATE CAKE on the google search. And scrolled down through the pics. That’s when I realized one thing or two things… The first is that no matter how many chocolate cakes I saw, I wanted to try each one of them. So, point taken. In the case of a chocolate cake enough is never enough! So with my spirits up, here I am sharing with you our Traditional Greek “Sokolatopita”. Oh, yes! And the second thing I realized, is that my chocolate cake recipe must be one of the softest you can find. Wondering why?
Making It Stand out
Well, for one, it’s soaked in syrup. A syrup that’s made along with honey. That gives this cake a unique sweet flavor. Secondly, it’s made only with cocoa powder, I don’t use any chocolate in this recipe. Cocoa gives this cake (and every cake) a very soft texture. Even without the addition of syrup.
NOTE: Did you know, that cocoa gives a much stronger chocolaty-flavor than chocolate? Yeap, it’s true! Especially when you bake it. That’s why I call this recipe a prescription for chocoholics.
And thirdly, after it is baked, it’s sprinkled with an extra cocoa, honey and gelatin mixture. Which gives a cool, soft glazing that covers mostly the edges that tend to overdry when baking. In overall, the cooking method is very simple and similar to the Greek Walnut Cake Recipe. Do not get scared when you think about syrup and glazing. This is really one of the easiest chocolate cakes you can make. And one of the cheapest too, due to the lack of chocolate.
Now the reason this cake is traditionally made with syrup, is that like in most Greek desserts, syrup is used as a way of preserving them. That’s because Greek cuisine consists mostly of recipes and cooking methods that go way-way back in time. You know, when people didn’t own a fridge and had to find a way to keep food from spoiling. So they used syrup in desserts and salts and brines to preserve salty foods. That really doesn’t make this cake a poor one though. In most cases, old peoples recipes, seem to know better. We all have a grandma, that cooks so well that it seems like no one can beat her.
And to complete this cakes old world charm, brandy is used as a flavoring in this Chocolate sponge cake recipe.
Sugar Time, Anytime
All in all, this cake tastes like it’s out of this world. It’s so soft and moist, and so enriched in chocolate flavor with just a sweet hint of brandy. Cheap and easy to make. Plus it’s a cake that you can eat it in the morning, with your hot coffee. At night with a nice glass of cold milk, sprinkled with cinnamon. Or at any other time during the day. It feels so light for a chocolate cake that it makes you think it should be forbidden.
