Ok, second wisdom tooth removed. –What’s the matter with these teeth anyway? I had it surgically removed yesterday and I’m not able to eat anything at the moment. 😞 So I’ve been thinking this morning –What is it that I really want to eat right now and cannot? (best ideas come when you are really hungry). YES! I would really love to eat a hearty egg-lemon meatball soup. It would be just perfect so I’ll cook it for the family while I’ll compromise with some of the liquid of the soup (hopefully).
And that’s exactly what I did. It turned out perfect. Well, I didn’t get to try the meatballs, only the soup drained from the rice. But that’s what everyone said. And I’m pretty sure they didn’t do so because they didn’t want to hurt my feelings. Besides, it’s not the first time I make this recipe.
Anyways, this dish is a very comforting and nourishing one. Packed with homey-flavors. Delicious meatballs cooked to very soft, inside a creamy egg-lemon soup with rice. It’s pretty similar to our traditional Stuffed Cabbage Leaves In Egg-Lemon Sauce. The only major difference between them is the cabbage.

This Easy Meatball Soup With Rice, doesn’t require much preparation or cooking. You mix all the ingredients for the meatballs in a bowl and then toss shaped meatballs into a boiling water. After a few minutes, you add the rice and when everything is cooked, you thicken the soup with egg and lemon. The best about this recipe is that everything gets cooked in one pot. Plus, with some low-cost ingredients, it yields enough meatballs for the whole family.
The Secret’s In The Bread
The secret of this recipe, that will make your meatballs unbelievably soft and to melt-in-your-mouth, is the bread. Take a loaf of bread, preferably any old remnants and use only the inside without the crust. Slightly soak it in water and then mix it well into the meatball mixture. Until it incorporates completely. This gives the meatballs enough moisture and helps them keep soft while they get cooked. It’s a trick that we use in most of our meatballs recipes in Greece. Sometimes we even dip the bread in red wine, if we are to cook our meatballs in a tomato sauce (recipe coming soon).
