What are Greek Stuffed Tomatoes and peppers?
Greek stuffed tomatoes and peppers, is a classic Greek cuisine recipe. In Greece It’s a dish we mostly cook in the summer. The tomato and pepper cups, are filled with a moist and tasty blend of rice and vegetables . They get slowly cooked in the oven, by covering the pan with aluminum foil to create steam for the rice to cook.(Now there’s a way to cook rise, that I bet you haven’t tried) In addition you protect the vegetables from burning.
Only fresh ingredients are used. Which makes it a light meal yet very fulfilling. The fresh tomato juice gives this dish a pungently sweet taste. Whereas, the mint leaves give a refreshing unique aroma. It could be a nice side dish for you to serve. Other than the classic steamed rice or oven baked potatoes (that I’m sure you’re a bit bored off). It’s also a highly flavored vegetarian meal option.

When I think of this dish, It reminds me of summer. This, plus a Greek salad or any tomato salad as a matter of fact. Summer, and especially the month of August is the pick of the tomato season. That’s when the tomatoes are ripe and rich in flavor. During that time, I can literally eat tomato salad every day. They’re that good. Any ways back to the recipe.
As you may have guessed by now you will need some extra ripe, extra sweet tomatoes. This recipe is so flavorful because of them. Let’s move to the peppers because I seem to keep talking about tomatoes again… You will need green bell peppers, to accompany my beloved tomatoes. Some people (like my grandma for example) like to stuff courgettes or eggplants. You may give it a try if you wish, but most people prefer the tomatoes and peppers only.
PS: You have to try it with feta cheese.
