Did I tell you? I’ve been trying to give up on sugar lately. Looks like IBS is really in fashion right now and it seems that antibiotics can be really harmful to your GI tract (sadly I had to find out the hard way). Thankfully things have gotten better with some proper food and the right diet. And guess what this diet called for…giving up on Sugar! (for a while)
Well, I’m glad because this way I discovered, that you can have a truly scrumptious dessert without any sugar in it. Yes, it’s true! And I’m not a person that would really add an avocado to my chocolate cake for example in order to make it healthier (the idea makes me sick) so I’m not exaggerating here when I say it’s truly scrumptious.
The Best Sugar Substitute, Honey!
The idea of honey came to me after reading somewhere, that honey was the only sweetening agent available in Ancient Greece. It was in fact considered as a food for the Gods. Now we all know how healthy honey is. What you probably don’t know, (and I sure didn’t) is that it’s the BEST SUGAR SUBSTITUTE. In most cases, you can’t even tell the difference (of a dessert made with sugar to a dessert made with honey). That’s where my honey-craze began. I made Christmas Gingerbread during the holidays without any sugar just honey. They were soo good. I’ve made a pastry cream, whipping cream, and even a cake roll all without a hint of sugar. I was really amazed and really try to find a reason as to why use sugar instead of honey after all?
The Greek Yogurt Panna Cotta
Anyways, I will share these recipes in the future. For now, I’ll share with you this Greek Yogurt Panna Cotta which was the beginning of my honey-craze. It’s a very light and refreshing dessert, like every Panna Cotta. Although this, is also a very healthy one, that’s made with Greek yogurt, honey and lots of fresh and dried fruits and nuts.
What’s On Top
You can top this Greek Yogurt Panna Cotta with a fruit and nut mixture of your preference. My advice? Keep it seasonal. Seasonal produce=less pesticides and chemicals. I’ve topped mine with banana, kiwi, clementines, and a storebought dried fruit and nut mix that contained, raisins, caseous, papaya, and coconut. And of course a drizzle of extra honey on top. Oh, and keep in my mind that this Panna Cotta is firmer and thicker than the usual ones. It’s very very creamy, due to the Greek Yogurt and cream. The good thing about this is that you can use unique and beautiful mini molds since it un-molds very easily. I made mine in mini cupcake silicone molds. Soo easy to handle and soo beautiful when served.
To conclude, I’m basically giving you the base of a healthy Greek yogurt Panna Cotta here and let you get creative. Give it any shape you like from a heart to a flower and so on. And top it with your favorite fruits and nuts. Isn’t getting creative all the fun of cooking after all?
