Greek Baked Potatoes With Veggies (Vegan)

Soft and mellow baked potatoes with, tomatoes, onions, peppers.

Ingredients

  • 700 grams potatoes
  • 200 grams or 1 medium-sized tomato
  • 150 grams or 1 small green bell pepper
  • 120 grams onion or 1⁄2 onion
  • 1 tablespoon dried oregano
  • 50 ml olive oil
  • kosher salt
  • pepper
  • a small baking dish

Instructions

  • Preheat oven to 220°C / 428°F.
  • Cut all vegetables into squared bite-sized pieces. Mix with remaining ingredients.
  • Transfer to baking dish. Half cover with water.
  • Bake for approx. 1 hour flipping the veggies every 10-15 so everything gets cooked evenly.
