For The Truffles:
- 200 grams heavy whipping cream
- 100 grams butter
- 80 grams sugar
- 3 tablespoons cocoa powder
- 250 grams vanilla biscuits finely crumbled
- 2 tablespoons brandy or your favorite liquor
For Coating:
- shredded desiccated coconut
- unsweetened cocoa powder
- finely chopped almonds or walnuts, pecans, hazelnuts
Add cream, butter, and sugar in a small saucepan and bring to a simmer over medium-high heat.
Whisk until the sugar dissolves.
Add the cocoa powder and whisk.
Once the cocoa is fully combined and the mixture starts to thicken slightly remove from heat.
Whisk in the crumbled biscuits and brandy. Let mixture cool in the fridge for at least 2-3 hours.
Take a small piece from the mixture and shape it into a ball.
Roll each ball into your preferred coating. If using different coatings it's better to place each truffle in small baking paper cups.
