Cleansing & Detox Simple Greek Lettuce Salad

Ingredients

For The Salad:

  • 1 small romaine lettuce
  • 2 spring onions
  • a handful of dill
  • a handful of parsley
  • Optional: lamb's lettuce

For The Dressing:

  • 1 teaspoon honey
  • ½ lemon juice
  • 2 tablespoons apple cider vinegar
  • 6 tablespoons olive oil
  • kosher salt
  • ground pepper

Instructions

For The Salad:

  • Wash lettuce and let it air dry so it will be airy and crunchy.
  • Finely chop the lettuce, dill, parsley, and spring onions and add to a salad bowl.

For The Dressing:

  • In a bowl whisk together all of the ingredients for the dressing.
  • Pour over the greens and mix well.
  • Serve in a plate or salad bowl. Top with few lamb's lettuce leaves.

Notes

-This isn’t supposed to be a soggy salad. Mix it up with the dressing, right when you are about to serve it. Do not let it stand as it will lose its crunchiness.
-Try and find a lettuce that looks fresh and crunchy with light green leaves. Don’t buy the very dark green and old ones.
