Cleansing & Detox Simple Greek Lettuce Salad

For The Salad:
- 1 small romaine lettuce
- 2 spring onions
- a handful of dill
- a handful of parsley
- Optional: lamb's lettuce
For The Dressing:
- 1 teaspoon honey
- ½ lemon juice
- 2 tablespoons apple cider vinegar
- 6 tablespoons olive oil
- kosher salt
- ground pepper
For The Salad:
Wash lettuce and let it air dry so it will be airy and crunchy.
Finely chop the lettuce, dill, parsley, and spring onions and add to a salad bowl.
For The Dressing:
In a bowl whisk together all of the ingredients for the dressing.
Pour over the greens and mix well.
Serve in a plate or salad bowl. Top with few lamb's lettuce leaves.
-This isn’t supposed to be a soggy salad. Mix it up with the dressing, right when you are about to serve it. Do not let it stand as it will lose its crunchiness.
-Try and find a lettuce that looks fresh and crunchy with light green leaves. Don’t buy the very dark green and old ones.
