Trahana Soup With Feta Cheese

Traditional Greek Trahana soup is a really tasty, comfort food cooked in less than 30 minutes. Nice and thick with plenty of feta cheese melted inside!

  • In a medium-sized cooking pot bring to a boil over high heat, 5 cups of water (1250 ml), and the stock.
  • Once it starts to boil, add the olive oil and the Trahana.
  • Drop heat to medium-low and cook the Trahana for about 15 to 20 minutes. During that time keep an eye on the pot and stir very often with a wooden spoon. As the Trahana will start to thicken you will need to stir almost constantly so it won't stick at the bottom of the pot.
  • After 15-20 minutes Trahana is going to look like a really thick soup. At this point stir in the feta cheese and cook for 1-2 minutes more. Turn the heat off and taste to see if it needs any additional salt. As the feta cheese is very salty on its own.
  • Serve Trahana right away while it's still hot from the pot. It gets thicker the more it sits. You can always add a splash of hot water if it turns out too thick.
  • Serve with plenty of freshly ground pepper on top. And some extra crumbled feta as well if you like.
