Healthy & Creamy Greek Yogurt Mashed Potatoes

  • 5-6 medium-sized potatoes about 1200 grams
  • 3 loaded tablespoons full fat Greek yogurt
  • OPTIONAL: 2 tablespoons extra virgin olive oil
  • salt & pepper


  • Peel and cut potatoes to large cubes.
  • Add to a medium-sized cooking pot and cover with water.
  • Boil potatoes until they're soft enough to fall apart when you prick them.
  • Remove from heat. Pour the remaining water from the pot, to a mixing bowl, and set aside.
  • Mash potatoes using an electric hand mixer starting with low speed. Incorporate the Greek yogurt.
  • Pour in some of the water until mashed potatoes look creamy to your liking. Note: Keep in mind the more they stand the firmer they gets.
  • Season with salt and pepper and add the olive oil.
