Peel and cut potatoes to large cubes.
Add to a medium-sized cooking pot and cover with water.
Boil potatoes until they're soft enough to fall apart when you prick them.
Remove from heat. Pour the remaining water from the pot, to a mixing bowl, and set aside.
Mash potatoes using an electric hand mixer starting with low speed. Incorporate the Greek yogurt.
Pour in some of the water until mashed potatoes look creamy to your liking. Note: Keep in mind the more they stand the firmer they gets.
Season with salt and pepper and add the olive oil.
